Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prepare for baking the rolls.
- Prepare Apple Filling: In a skillet over medium heat, melt the coconut oil or butter. Add the diced apples, brown sugar or maple syrup, cinnamon, nutmeg, and lemon juice. Cook for 5–7 minutes until the apples become soft and syrupy. Stir in the cornstarch if using and cook for another minute. Remove from heat and let the mixture cool slightly.
- Soften Rice Paper: Fill a shallow dish with warm water and dip one rice paper wrapper into the water for 10–15 seconds, until it becomes pliable but not too soft. Lay it flat on a clean surface.
- Fill and Roll: Spoon 2–3 tablespoons of the apple filling onto the bottom third of the rice paper wrapper. Fold the sides inward and roll it up tightly like a spring roll to enclose the filling.
- Arrange on Baking Sheet: Place the roll seam-side down on the prepared baking sheet. Repeat the process with the remaining wrappers and filling.
- Brush with Oil: Lightly brush or spray the rolls with cooking oil to help them crisp up evenly during baking.
- Bake Rolls: Bake in the preheated oven for 20–25 minutes, flipping once halfway through, until the rolls are golden brown and crisp on both sides.
- Cool and Serve: Let the baked rolls cool slightly before serving. Enjoy them as-is or with a dusting of powdered sugar or a dipping sauce like caramel or vanilla yogurt for added flavor.
