Peanut Lime Sauce

  • 1/4 cup peanut butter (creamy or chunky)
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tbsp soy sauce
  • 1 tsp honey or maple syrup
  • 1 tsp sesame oil (optional)
  • 1/2-1 tbsp warm water (to adjust consistency)
  • 1/2 tsp chili garlic sauce (optional for heat)


Instructions

  1. Cook the Beef: In a large skillet or wok, heat the oil over medium-high heat. Add the chopped onion and garlic and sauté for 2-3 minutes until fragrant and translucent.
  2. Brown the Beef: Add the ground beef to the pan, breaking it up with a spoon. Cook until browned and cooked through, about 5-7 minutes. If using thinly sliced beef, cook it until browned on all sides and fully cooked.
  3. Add Flavor and Vegetables: Stir in soy sauce, oyster sauce (if using), ground ginger, shredded carrots, and chopped bell pepper. Cook for another 2-3 minutes until the vegetables soften but retain some crispness.
  4. Finish the Filling: Remove the beef mixture from heat and let it cool slightly. Once cooled, stir in the chopped cilantro for freshness.
  5. Prepare Rice Paper Wrappers: Fill a shallow dish or large bowl with warm water. Carefully dip one rice paper wrapper into the water and hold for 5-10 seconds until soft and pliable. Avoid soaking too long to prevent tearing.
