Instructions

  1. Preheat oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the bars evenly.
  2. Mix dry ingredients: In a large mixing bowl, combine the quick cooking oats, oat flour, brown sugar, baking soda, cinnamon, and salt. Stir them together until thoroughly blended.
  3. Combine wet ingredients: In another bowl, whisk together the eggs, almond milk, melted coconut oil, honey, and vanilla extract until smooth and well combined.
  4. Combine ingredients: Pour the wet ingredients into the bowl with the dry ingredients. Mix gently until just combined to avoid overmixing. Then carefully fold in the blueberries to distribute them evenly without breaking them.
  5. Bake: Transfer the batter into a greased or lined baking dish, spreading it evenly. Bake in the preheated oven for 35 to 40 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
