Description

Buffalo Chicken Roll-Ups are a spicy and creamy appetizer featuring shredded rotisserie chicken, cream cheese, and a blend of mozzarella and sharp cheddar cheeses, all combined with tangy buffalo sauce and wrapped in flaky puff pastry. These bite-sized treats are perfect for game day or any gathering, baked to golden perfection and served with drizzles of ranch and extra buffalo sauce for a flavorful kick.

Ingredients

Scale

Buffalo Chicken Mixture

  • 1 package (8 ounces) cream cheese, room temperature
  • 2 cups (280g) rotisserie chicken, shredded and chopped
  • 1 cup (113g) mozzarella cheese, shredded
  • 1 cup (113g) sharp cheddar cheese, shredded
  • 1/3 cup (84g) buffalo sauce

Puff Pastry and Finishing

  • 1 sheet puff pastry, thawed
  • 1 large egg, beaten
  • Ranch dressing, for drizzling
  • Extra buffalo sauce, for drizzling
  • Parsley, for garnish

Instructions

  1. Preheat the Oven and Prepare the Baking Sheet: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper to prevent sticking and ease cleanup.
  2. Make the Buffalo Chicken Filling: In a medium bowl, combine the cream cheese, shredded rotisserie chicken, mozzarella cheese, cheddar cheese, and buffalo sauce. Mix thoroughly until all ingredients are evenly incorporated. Set this mixture aside.
  3. Prepare the Puff Pastry: Lightly flour a clean surface and roll out the thawed puff pastry sheet into a 9×12-inch rectangle to create a flat base for your filling.
  4. Fill and Roll the Pastry: Spread the buffalo chicken mixture evenly over the puff pastry, leaving about a 1/2-inch border around the edges. Carefully roll the pastry into a tight log, sealing the edges as you roll to keep the filling contained. Slice the rolled log into 1-inch pieces for individual roll-ups.
  5. Bake the Roll-Ups: Arrange the roll-ups on the prepared baking sheet. Brush the tops with the beaten egg to help them develop a shiny, golden crust. Bake for 15–18 minutes or until they turn golden brown. Optionally, top with additional buffalo chicken mixture and bake for another 6–8 minutes to warm through.
  6. Serve and Enjoy: Once baked, drizzle the roll-ups with extra buffalo sauce and ranch dressing. Garnish with fresh parsley, then serve warm for the best flavor and texture.

Notes

  • Using rotisserie chicken saves time and adds extra flavor.
  • Ensure puff pastry is properly thawed before rolling to avoid cracking.
  • You can adjust the amount of buffalo sauce to make it milder or spicier.
  • For added crispness, place the roll-ups on a wire rack before baking to allow even heat circulation.
  • These roll-ups can be made ahead and reheated in the oven before serving.
