- 8 oz unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 tsp salt
- 1 1/2 tsp pure vanilla extract
- 1 large egg yolk
- 2 cups all-purpose flour
Instructions
- Prepare the Dough: Beat butter, sugar, salt, and vanilla together until smooth and creamy. Add the egg yolk, mixing until fully incorporated, scraping down the bowl as needed.
- Add Flour: Gradually mix in the flour until just incorporated to form the cookie dough.
- Shape and Chill: Turn the dough onto a lightly floured surface, knead a few times until smooth, shape into a log, wrap in plastic wrap, and refrigerate for several hours or freeze for later.
- Preheat Oven: Preheat your oven to 325°F (160°C) and line baking sheets with parchment paper.
- Slice and Bake: Slice the chilled dough into 1/8-inch thick rounds. Arrange them 1 inch apart on the prepared baking sheets.
- Bake and Cool: Bake the cookies for 16-18 minutes, or until the edges just begin to turn golden. Remove from oven and let cool on a wire rack before serving.
