Instructions
- Prepare the vegetables: Wash and chop the cabbage, dice the onion, peel and chop the carrots, chop the celery stalks, and mince the garlic to get all your ingredients ready for cooking.
- Sauté aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic and sauté for about 3-4 minutes until fragrant and translucent.
- Add spices: Stir in the ground turmeric, ground cumin, black pepper, and paprika into the pot. Cook for another minute to toast the spices and release their aromas.
- Add vegetables and liquids: Add the chopped cabbage, carrots, celery, canned diced tomatoes with their juice, and vegetable broth to the pot. Stir well to combine all ingredients.
