Instructions

  1. Prepare the vegetables: Wash and chop the cabbage, dice the onion, peel and chop the carrots, chop the celery stalks, and mince the garlic to get all your ingredients ready for cooking.
  2. Sauté aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic and sauté for about 3-4 minutes until fragrant and translucent.
  3. Add spices: Stir in the ground turmeric, ground cumin, black pepper, and paprika into the pot. Cook for another minute to toast the spices and release their aromas.
  4. Add vegetables and liquids: Add the chopped cabbage, carrots, celery, canned diced tomatoes with their juice, and vegetable broth to the pot. Stir well to combine all ingredients.
