Instructions

  1. Heat the olive oil and sauté aromatics: In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion, sliced carrots, and celery. Sauté for 5 to 7 minutes until the vegetables begin to soften and release their flavors.
  2. Add garlic: Add the minced garlic to the pot and cook for an additional 1 minute, stirring frequently to prevent burning and to meld the flavors.
  3. Add remaining vegetables and liquids: Stir in the chopped cabbage, chopped zucchini, and the can of diced tomatoes including the juice. Pour in 6 cups of vegetable or chicken broth, then add dried thyme, paprika, salt, and black pepper. Stir to combine all ingredients thoroughly.
  4. Simmer the soup: Bring the mixture to a boil over high heat. Once boiling, reduce the heat to low and let the soup simmer uncovered for 25 to 30 minutes. This allows the vegetables to become tender and the flavors to meld beautifully.
