Description

Casino Buns with Chicken is a savory baked sandwich featuring tender shredded chicken mixed with mayo, Dijon mustard, and herbs, all encased in soft homemade buns. Topped with cheddar and sesame seeds, these buns make a flavorful and satisfying meal perfect for gatherings or family dinners.

Ingredients

Scale

Chicken Filling

  • 2 large chicken breasts (boneless, skinless, cooked and shredded)
  • 1/2 cup mayonnaise
  • 1/4 cup Dijon mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme or rosemary
  • Salt and pepper, to taste
  • 1/4 cup grated cheddar cheese (optional, for extra flavor)

Dough

  • 2 cups all-purpose flour
  • 2 tsp active dry yeast
  • 1/2 cup warm water
  • 2 tbsp olive oil
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1/4 tsp garlic powder (optional for flavor)

Topping

  • 1 egg (for egg wash)
  • 1 tbsp sesame seeds (optional, for topping)
  • Fresh parsley or chives (chopped, for garnish)

Instructions

  1. Prepare the Dough: In a mixing bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until foamy, indicating the yeast is activated. Then, add olive oil, salt, garlic powder, and gradually mix in the all-purpose flour. Knead the dough on a floured surface for 8-10 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for 1 hour or until doubled in size.
  2. Make the Chicken Filling: While the dough is rising, in a medium bowl mix shredded cooked chicken, mayonnaise, Dijon mustard, garlic powder, onion powder, dried thyme or rosemary, salt, and pepper. Stir until all ingredients are combined evenly. If desired, fold in grated cheddar cheese for extra richness and flavor.
  3. Shape the Buns: Once the dough has risen, punch it down to release air. Divide the dough into 8 equal portions. Roll each portion into a small flat circle. Place a generous spoonful of chicken filling in the center of each dough circle. Fold the edges over the filling and pinch to seal, shaping each into a bun. Position the buns seam-side down on a baking tray lined with parchment paper.
  4. Apply Egg Wash and Add Topping: Beat the egg and lightly brush each bun with the egg wash to give a golden shiny finish after baking. Sprinkle sesame seeds on top if using, then let the buns rest for 10-15 minutes to slightly proof before baking.
  5. Bake the Buns: Preheat your oven to 375°F (190°C). Bake the buns in the preheated oven for 20-25 minutes or until they are golden brown, cooked through, and the filling is heated. Remove from oven and let cool slightly.
  6. Garnish and Serve: Garnish with freshly chopped parsley or chives. Serve warm as a delicious snack or meal accompaniment.

Notes

  • Ensure the chicken is fully cooked and shredded finely for easy filling.
  • You can substitute dried thyme with rosemary or your preferred herb.
  • For a richer taste, add cheddar cheese inside the filling or sprinkle extra on top before baking.
  • Use warm water for yeast activation but avoid too hot water that can kill the yeast.
  • Keep the dough covered during rising to prevent drying out.
