Instructions

  1. Cook the Cauliflower: Steam or boil the cauliflower florets for 8 to 10 minutes until tender. Drain them thoroughly and allow to cool slightly to prevent excess moisture in the batter.
  2. Prepare Cauliflower Mixture: Pulse the cooked cauliflower in a food processor until finely chopped, or mash it by hand to a coarse consistency. Transfer to a large bowl.
  3. Mix the Batter: Add the eggs, flour, grated Parmesan, minced garlic, salt, black pepper, smoked paprika (if using), and chopped parsley to the cauliflower. Stir well until you get a sticky, cohesive batter ready to hold together when fried.
  4. Heat the Oil: Warm 2 to 3 tablespoons of olive oil in a large skillet over medium heat, ensuring the surface is evenly coated for frying.
  5. Cook the Fritters: Scoop about 2 to 3 tablespoons of the batter per fritter onto the skillet and flatten lightly with the back of the spoon. Fry for 3 to 4 minutes on each side until the fritters achieve a golden brown crust and are cooked through.
