Cheesy Spinach Sauce

  • 3 cloves garlic, minced
  • 2 cups fresh spinach, roughly chopped (or 1 cup frozen spinach, thawed and drained)
  • 1 cup cream cheese, softened
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon Dijon mustard (optional, for extra flavor)
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder

Garnish

  • Fresh parsley, chopped (for garnish)
  • Extra grated Parmesan cheese (optional)


Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain the pasta, reserving about ½ cup of pasta water, and set aside.
  2. Cook the Chicken: While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Season chicken pieces with salt and black pepper. Cook the chicken for 6-8 minutes until fully cooked and nicely browned. Remove the chicken and set aside.
