Instructions

  1. Preheat and prepare dish: Preheat your oven to 375°F and lightly grease a 9×13-inch baking dish to prevent sticking.
  2. Cook tortellini: Boil the refrigerated cheese tortellini according to package directions but reduce the cook time by 1 minute to ensure they remain firm. Drain well and set aside.
  3. Make Alfredo sauce: In a large saucepan, melt the butter over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant. Whisk in the flour and cook for an additional minute to form a roux.
  4. Add dairy: Slowly pour in the heavy cream and whole milk while whisking constantly to create a smooth mixture.
  5. Incorporate cheeses and seasoning: Stir in the grated Parmesan, softened cream cheese, 1 cup of shredded mozzarella, Italian seasoning, salt, and black pepper. Continue stirring until the cheeses melt and the sauce thickens, about 3 to 4 minutes.
  6. Combine pasta and sauce: Add the cooked tortellini to the sauce, stirring well to ensure each piece is fully coated with the creamy mixture.
