For the Chicken Burgers
- 1 ½ lb ground chicken meat (thighs preferred)
- 2 scallions, chopped
- 1 cup shredded cheese (Cheddar, Gouda, Provolone)
- ¼ cup mayo
- ½ tsp salt
- ½ tsp pepper
For the Avocado Corn Salsa
- 1 large avocado, sliced
- 1 ear of fresh corn, kernels removed
- â…› cup chopped fresh cilantro
- ½ tbsp olive oil
- Salt and pepper to taste
- ½ lime, juiced
Instructions
- Prepare the Chicken Patty Mixture: Place the ground chicken in a large mixing bowl. Add in the shredded cheese, chopped scallions, mayonnaise, salt, and pepper. Mix thoroughly until all ingredients are evenly incorporated. Shape the mixture into 8 equal-sized patties.
- Grill the Patties: Preheat the grill to medium-high heat. Place the chicken patties on the grill and cook for about 5 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the patties are fully cooked through.
- Make the Avocado Corn Salsa: Cut the kernels off the fresh ear of corn and add them to a mixing bowl. Add the sliced avocado, chopped cilantro, olive oil, lime juice, and salt and pepper to taste. Gently toss to combine all ingredients without mashing the avocado.
- Serve: Place the grilled chicken burgers on buns or plates and spoon the avocado corn salsa generously over each patty. Serve immediately while warm.
