Description

These Chicken Roll Ups are a delicious and easy-to-make dish featuring tender chicken breasts seasoned with a flavorful blend of garlic, smoked paprika, and Italian herbs. Each breast is generously spread with creamy Boursin cheese and shredded mozzarella, then rolled up and baked to perfection, creating a savory, cheesy main course that’s perfect for weeknight dinners or entertaining guests.

Ingredients

Scale

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper

Main Ingredients

  • 1 pound thinly sliced chicken breasts
  • 5.3 ounces garlic & fine herbs Boursin cheese (1 package)
  • ½ cup freshly shredded mozzarella cheese

Instructions

  1. Preheat and Prep: Preheat your oven to 375°F (190°C). Line a baking sheet with aluminum foil or parchment paper to ensure easy cleanup after baking.
  2. Season Chicken: In a small bowl, combine the garlic powder, smoked paprika, Italian seasoning, kosher salt, and ground black pepper. Sprinkle this seasoning mixture evenly over both sides of the thinly sliced chicken breasts to infuse flavor.
  3. Fill and Roll: Spread the garlic & fine herbs Boursin cheese evenly over each chicken breast, then sprinkle the shredded mozzarella cheese on top. Starting from one end, tightly roll up each chicken breast, making sure to keep the filling inside, and place the rolls seam-side down onto the prepared baking sheet.
  4. Bake: Place the baking sheet in the preheated oven and bake the chicken roll ups for 35-40 minutes, or until the internal temperature of the chicken reaches 165°F (74°C), ensuring they are fully cooked and juicy.

Notes

  • Use thinly sliced chicken breasts to ensure even cooking and easy rolling.
  • Check internal temperature with a meat thermometer to avoid overcooking.
  • You can substitute Boursin cheese with cream cheese mixed with garlic and herbs if unavailable.
  • Serve with a side of steamed vegetables or a fresh green salad for a balanced meal.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated gently.
