Ingredients
Scale
Base
- 4 cups Rice Krispies cereal
- 1/4 cup unsalted butter
- 1 (10-ounce) bag marshmallows
- 1 teaspoon vanilla extract
- 1/2 cup dried cherries, chopped
Chocolate Topping
- 1/2 cup dark chocolate chips
- 1 teaspoon coconut oil
Instructions
- Prepare the Pan: Line an 8×8-inch baking dish with parchment paper and lightly grease it with butter or nonstick spray to prevent sticking.
- Melt the Marshmallows: Over low heat, melt the butter in a large pot. Add the marshmallows and stir continuously until they are fully melted and the mixture is smooth.
- Add Flavor: Remove the pot from heat and stir in the vanilla extract to enhance the flavor base.
- Combine Ingredients: Fold in the Rice Krispies cereal and chopped dried cherries, mixing gently but thoroughly to ensure even coating of the marshmallow mixture.
- Shape the Treats: Press the mixture firmly into the prepared baking dish using a spatula or lightly greased hands. Allow it to cool completely so it sets properly.
- Melt the Chocolate: Place the dark chocolate chips and coconut oil into a microwave-safe bowl. Heat in 20-second intervals, stirring in between, until the chocolate is melted and smooth.
- Add the Chocolate Topping: Drizzle or spread the melted chocolate evenly over the cooled Rice Krispies treats. Let the chocolate set at room temperature or refrigerate for quicker firmness.
- Cut & Serve: Once the chocolate is firm, cut the treats into squares and serve to enjoy a delicious combination of textures and flavors.
Notes
- Use parchment paper to make removal easier and cleanup quicker.
- For extra tartness, substitute dried cherries with dried cranberries or mixed dried berries.
- Be careful not to overheat the chocolate to avoid burning or seizing.
- Store the treats in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- Press the mixture firmly to ensure treats hold their shape well when cutting.
