Mushroom Soak

- 1 cup buttermilk

- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper

Instructions
- Soak Mushrooms: Place the cleaned mushrooms in a bowl and pour the buttermilk over them. Let them soak for at least 15 minutes to tenderize and infuse flavor.
- Prepare Coating Mixture: In a separate bowl, whisk together the all-purpose flour, cornmeal, garlic powder, onion powder, smoked paprika, salt, and black pepper until well combined.
- Heat Oil: Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C). Use a thermometer to maintain the correct frying temperature for even cooking.
- Coat Mushrooms: Working in batches, remove the mushrooms from the buttermilk, allowing excess to drip off. Dredge them thoroughly in the flour and cornmeal mixture, ensuring an even coating on all sides.
- Fry Mushrooms: Carefully place the coated mushrooms into the hot oil. Fry for 3–4 minutes, turning occasionally, until they turn golden brown and achieve a crispy texture.
- Drain and Serve: Use a slotted spoon to remove the mushrooms from the oil and drain them on paper towels to remove excess oil. Serve hot with your favorite dipping sauce for best taste.
