Description

This colorful Easter Jell-O Pie is a delightful, no-bake dessert perfect for spring celebrations. Featuring layers of vibrant Jell-O gelatin mixed with whipped cream and fresh fruit atop a crunchy graham cracker crust, it’s as fun to make as it is to eat. The pie combines fruity flavors and creamy texture, creating a light and refreshing treat that’s ideal for holiday gatherings and family meals.

Ingredients

Scale

Crust

  • 2 cups crushed graham crackers
  • 1/2 cup melted butter

Filling

  • 2 packages Jell-O gelatin (various flavors)
  • 1 cup boiling water
  • 2 cups whipped cream
  • 1 tablespoon lemon juice
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries

Instructions

  1. Prepare the crust: Mix the crushed graham crackers with melted butter until evenly combined. Press the mixture firmly into the bottom and slightly up the sides of a 9-inch pie dish to form a crust. Set aside.
  2. Dissolve the gelatin: In a heatproof bowl, dissolve two packages of Jell-O gelatin in one cup of boiling water, stirring continuously until completely dissolved. Add lemon juice to enhance flavor. Allow the gelatin mixture to cool slightly but not set.
  3. Make the creamy filling: Gently fold two cups of whipped cream into the cooled gelatin mixture until well combined. This will create a light and airy pie filling.
  4. Layer and chill: Pour half of the gelatin and whipped cream mixture over the prepared crust. Refrigerate the pie for 30 minutes to allow the first layer to set. Once set, add a layer of fresh strawberries and blueberries, then pour remaining gelatin mixture over the fruit. Refrigerate again.
  5. Final chilling: Chill the completed pie for at least four hours or overnight to fully set the gelatin layers and meld the flavors before serving.

Notes

  • Use assorted Jell-O flavors to create colorful layers for a festive look.
  • For best results, do not pour the gelatin filling when it is too hot, or it may melt the whipped cream or graham cracker crust.
  • You can substitute fresh fruit with canned fruit, but drain well to avoid excess moisture.
  • To make the pie more festive, garnish with additional whipped cream or whole berries before serving.
  • Keep the pie refrigerated until just before serving to maintain texture.
