- 1 cup fresh blueberries
Instructions
- Prepare the crust: Mix the crushed graham crackers with melted butter until evenly combined. Press the mixture firmly into the bottom and slightly up the sides of a 9-inch pie dish to form a crust. Set aside.
- Dissolve the gelatin: In a heatproof bowl, dissolve two packages of Jell-O gelatin in one cup of boiling water, stirring continuously until completely dissolved. Add lemon juice to enhance flavor. Allow the gelatin mixture to cool slightly but not set.
- Make the creamy filling: Gently fold two cups of whipped cream into the cooled gelatin mixture until well combined. This will create a light and airy pie filling.
- Layer and chill: Pour half of the gelatin and whipped cream mixture over the prepared crust. Refrigerate the pie for 30 minutes to allow the first layer to set. Once set, add a layer of fresh strawberries and blueberries, then pour remaining gelatin mixture over the fruit. Refrigerate again.
- Final chilling: Chill the completed pie for at least four hours or overnight to fully set the gelatin layers and meld the flavors before serving.
