Description

These Easy Easter Nest Cookies are a delightful no-bake treat perfect for celebrating the season. Combining a rich, chocolatey mixture with rolled oats and shredded coconut, these cookies form a nest shape to hold festive chocolate eggs, making them a fun and delicious snack or dessert for Easter gatherings.

Ingredients

Scale

Base Ingredients

  • ½ cup unsalted butter
  • ½ cup milk
  • 2 cups granulated sugar
  • ½ cup cocoa powder

Mix-ins

  • 3 cups rolled oats (old-fashioned or quick-cooking)
  • 1 cup shredded coconut

Topping

  • Chocolate eggs (such as Cadbury Mini Eggs or Whoppers Robin Eggs), 2-3 per cookie

Instructions

  1. Prep and Cook: Line baking sheets with wax paper. In a medium saucepan, combine the unsalted butter, milk, granulated sugar, and cocoa powder. Heat over medium heat while whisking constantly until the mixture is smooth. Bring it to a gentle boil and cook for 5 minutes, continuing to whisk to ensure it doesn’t stick or burn.
  2. Combine with Oats and Coconut: Remove the saucepan from the heat. Stir in the rolled oats and shredded coconut thoroughly until every oat is coated with the chocolate mixture and the ingredients are well combined.
  3. Shape Nests: Drop tablespoon-sized portions of the mixture onto the prepared baking sheets lined with wax paper. Use your fingers or the back of a spoon to create a small indentation in the center of each cookie, forming a nest shape. Place 2-3 chocolate eggs into the indentation of each cookie to mimic bird nests.
  4. Chill and Serve: Place the baking sheets in the refrigerator and chill for about 45 minutes to allow the cookies to firm up properly. Once set, remove them from the fridge and serve as a festive Easter treat.

Notes

  • Use old-fashioned oats instead of instant oats for a chewier texture.
  • Ensure constant whisking during boiling to prevent burning the chocolate mixture.
  • Refrigerate fully before serving so nests hold their shape well.
  • Optional: substitute dairy milk for plant-based milk to make them dairy-free.
  • Store the cookies in an airtight container in the fridge for up to a week.
