Ingredients
Scale
Vegetables
- 8-10 new potatoes, whole
- 12 white button mushrooms, whole
- 1 medium zucchini, sliced thick
- 1 medium yellow squash, sliced thick
- 1 large red onion, cut into 2-inch portions
- 2 sweet bell peppers, cut into 2-inch portions
Garlic Butter Sauce
- 3 cloves of garlic, finely minced
- 1/2 cup (1 stick) unsalted butter
- 1 tablespoon dried parsley
- Pinch of salt
- Pinch of black pepper
Instructions
- Prepare the Skewers: Arrange the new potatoes, mushrooms, zucchini slices, yellow squash slices, red onion portions, and bell pepper pieces evenly onto metal or bamboo skewers, alternating for color and texture variety.
- Make Garlic Butter: In a small saucepan, combine the 1/2 cup of unsalted butter with the finely minced garlic cloves, dried parsley, salt, and black pepper. Cook over medium heat until the butter melts completely and the garlic aroma releases, then remove from heat and set aside to keep warm.
- Heat Grill Pan: Place a flat griddle or grill pan on the stovetop over medium-high heat and allow it to become hot enough to sear the vegetables effectively.
- Grill the Skewers: Lay the prepared vegetable skewers onto the hot grill pan. Using a brush, generously apply the warm garlic butter mixture onto the vegetables.
- Cook and Rotate: Grill the skewers for 20 to 25 minutes, turning them every few minutes to ensure even cooking and charring on all sides. Continue brushing with the garlic butter after each turn to keep the vegetables moist and flavorful.
- Check Tenderness: Ensure that the new potatoes are tender by piercing them with a fork; the other vegetables should be soft but still retain some bite.
- Serve: Remove the skewers from the grill pan and serve immediately while hot and flavorful.
Notes
- Soaking bamboo skewers in water for 30 minutes before grilling prevents them from burning.
- You can substitute unsalted butter with a plant-based butter for a dairy-free option.
- Adjust seasoning to taste by adding more salt, pepper, or herbs like thyme or rosemary.
- To make this recipe gluten-free, ensure skewers and additional ingredients are gluten-free certified.
- If you don’t have a grill pan, use a regular skillet or an outdoor grill as alternatives.
