- 2 tablespoons sugar
- 3 1/2 to 4 cups all-purpose flour

- 1 teaspoon salt
Garlic Herb Butter Topping
- 1/4 cup unsalted butter, melted
- 3 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Optional: Grated Parmesan for topping

- Activate Yeast: In a small bowl, combine the warm water, sugar, and yeast. Stir and let it sit for 5-10 minutes until foamy, indicating the yeast is active.
- Make the Dough: In a large bowl or stand mixer, mix the flour, olive oil, salt, and yeast mixture until a soft dough forms. Add more flour as needed. Knead for 5-7 minutes until smooth and elastic, either on a floured surface or with a dough hook attachment.
- First Rise: Place dough in a greased bowl, cover with a kitchen towel, and let rise in a warm place for about 1 hour until it doubles in size.
- Shape Breadsticks: Punch down the risen dough and divide it into 12-15 equal pieces. Roll each piece into a 6-8 inch rope and arrange on a greased or parchment-lined baking sheet.
- Second Rise & Preheat Oven: Cover shaped breadsticks with a towel and let them rise for 20-30 minutes. Meanwhile, preheat the oven to 400°F (200°C).
- Prepare Herb Butter: Mix melted butter, minced garlic, parsley, oregano, and thyme in a small bowl.
- Brush & Bake: Brush breadsticks generously with the garlic herb butter. Bake in the preheated oven for 12-15 minutes until golden brown.
