Description

These Garlic Parmesan Potatoes are a delicious and easy-to-make side dish featuring crispy roasted baby potatoes coated with garlic, herbs, olive oil, and topped with savory Parmesan cheese. Perfectly golden and tender, they’re garnished with fresh parsley for a bright finish and pair wonderfully with a variety of main courses.

Ingredients

Scale

Potatoes

  • 2 lbs baby potatoes, halved

Seasoning

  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Cheese & Garnish

  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. Prepare the potatoes: In a large bowl, combine the halved baby potatoes with olive oil, minced garlic, dried rosemary, dried thyme, salt, and black pepper. Toss well until all potatoes are evenly coated with the seasoning mixture.
  3. Roast the potatoes: Spread the seasoned potatoes out in a single layer on the prepared baking sheet. Place in the oven and roast for 25-30 minutes, stirring halfway through the cooking time to ensure even roasting. The potatoes should be golden brown and tender when done.
  4. Add Parmesan: Remove the roasted potatoes from the oven and sprinkle the grated Parmesan cheese evenly over them. Gently toss the potatoes to coat them with the melted cheese.
  5. Garnish and serve: Sprinkle the roasted and cheesy potatoes with freshly chopped parsley. Serve immediately to enjoy the crispy texture and rich flavors.

Notes

  • You can use other herbs like oregano or basil depending on taste preferences.
  • For extra crispiness, increase the roasting temperature to 425°F and reduce the time accordingly.
  • If you prefer, substitute baby potatoes with fingerling or Yukon gold potatoes.
  • Make sure to cut potatoes evenly for uniform cooking.
  • These potatoes pair well with grilled meats, roasted chicken, or as a hearty vegetarian side.
