Description

This Garlic-Parmesan Roasted Cauliflower recipe is a flavorful and easy side dish featuring crispy roasted cauliflower florets tossed in garlic, Parmesan cheese, and aromatic spices. Perfectly roasted in the oven to a golden brown with a delightful cheesy crust, this dish makes a delicious accompaniment to any meal or a tasty snack on its own.

Ingredients

Scale

Cauliflower

  • 1 large head of cauliflower, cut into florets

Seasoning and Toppings

  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)
  • Lemon wedges (optional, for serving)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. Prepare the Cauliflower: In a large bowl, toss the cauliflower florets with olive oil, minced garlic, dried oregano, smoked paprika if using, salt, and freshly ground black pepper. Make sure all florets are evenly coated with the seasoning.
  3. Roast the Cauliflower: Spread the cauliflower in a single layer on the prepared baking sheet. Roast in the preheated oven for 20-25 minutes, turning the florets halfway through cooking to ensure even browning. The cauliflower should be golden brown and tender when done.
  4. Add Parmesan: Remove the baking sheet from the oven and sprinkle grated Parmesan cheese evenly over the cauliflower. Gently toss the florets to coat them with the cheese. Return the baking sheet to the oven and roast for an additional 5 minutes until the cheese has melted and formed a crispy crust.
  5. Garnish and Serve: Take the cauliflower out of the oven and garnish with freshly chopped parsley and a squeeze of lemon juice if desired. Serve immediately while warm and crispy for the best taste and texture.

Notes

  • For a spicier kick, add a pinch of chili flakes along with the smoked paprika.
  • Make sure to spread the cauliflower florets in a single layer for even roasting and crispiness.
  • The Parmesan cheese adds great flavor and crisp texture, but you can substitute with nutritional yeast for a vegan option.
  • Use fresh garlic for the best aroma and taste; pre-minced garlic can alter the flavor slightly.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven for best texture.
