- 1 cup cooked grits, cooled

Smoky Cream Sauce
- 1/2 cup sour cream
- 1 tsp smoked paprika
- 1 tsp lemon juice

Instructions
- Combine Ingredients: In a large bowl, mix together cooled grits, shredded sharp cheddar cheese, chopped grilled shrimp, sliced green onions, beaten egg, flour, salt, and pepper until the mixture is well combined and holds together.
- Form Fritters: Shape the mixture into approximately 8 small patties, ensuring they are firm enough to hold their shape during frying.
- Heat Oil: Warm 2 tablespoons of olive or vegetable oil in a skillet over medium heat, making sure the oil is hot but not smoking before adding fritters.
- Fry Fritters: Carefully place the fritters in the skillet and fry each side for 3 to 4 minutes until golden brown and cooked through, flipping once to ensure even cooking.
- Prepare Smoky Cream: While the fritters cook, combine sour cream, smoked paprika, lemon juice, and salt in a small bowl, stirring well to make a smooth smoky cream sauce.
- Drain and Serve: Remove the fritters from the skillet and let them drain on paper towels to remove excess oil. Serve warm with the smoky cream sauce either drizzled on top or on the side for dipping.
