Creamy Garlic Sauce

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon cilantro, chopped
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Additional Ingredients

  • 1 avocado, sliced or mashed
  • Sesame seeds, for garnish
  • Green onions, chopped, for garnish


Instructions

  1. Prep the Shrimp: In a bowl, combine the peeled and deveined shrimp with olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper if using. Toss thoroughly to ensure each shrimp is evenly coated with the seasoning.
  2. Make the Corn Salsa: In a separate bowl, mix the thawed corn, diced red onion, chopped cilantro, minced jalapeño if using, fresh lime juice, and a pinch of salt. Stir gently until well combined and set aside to let the flavors meld.
  3. Grill the Shrimp: Heat a grill or grill pan over medium heat. Arrange seasoned shrimp in a single layer and grill for 2-3 minutes per side, or until shrimp are pink and cooked through. Remove from heat and set aside.
