- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)

- 1/4 cup cilantro, chopped
- 1 jalapeño, seeded and minced (optional)
- 1 lime, juiced
- Salt, to taste
Creamy Garlic Sauce
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon cilantro, chopped
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Additional Ingredients
- 1 avocado, sliced or mashed
- Sesame seeds, for garnish
- Green onions, chopped, for garnish
Instructions
- Prep the Shrimp: In a bowl, combine the peeled and deveined shrimp with olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper if using. Toss thoroughly to ensure each shrimp is evenly coated with the seasoning.
- Make the Corn Salsa: In a separate bowl, mix the thawed corn, diced red onion, chopped cilantro, minced jalapeño if using, fresh lime juice, and a pinch of salt. Stir gently until well combined and set aside to let the flavors meld.
- Grill the Shrimp: Heat a grill or grill pan over medium heat. Arrange seasoned shrimp in a single layer and grill for 2-3 minutes per side, or until shrimp are pink and cooked through. Remove from heat and set aside.
- Make the Creamy Garlic Sauce: In a small bowl, whisk together mayonnaise, sour cream, chopped cilantro, lemon juice, minced garlic, salt, and black pepper until smooth and creamy.
- Assemble the Bowls: Divide prepared corn salsa evenly between serving bowls. Top with grilled shrimp and sliced or mashed avocado. Drizzle generously with creamy garlic sauce and garnish with sesame seeds and chopped green onions for added freshness and crunch.
Notes
- For an extra kick, leave the jalapeño seeds in the salsa or add more cayenne pepper to the shrimp.
- You can substitute frozen corn with fresh corn when in season for sweeter flavor.
- Serve with warm tortillas or over rice for a more filling meal.
- If grilling is not an option, shrimp can be cooked on a stovetop skillet.
- Adjust salt and spices according to your taste preferences.
