Ingredients
Scale
Shrimp and Vegetables
- 12 medium shrimp, peeled and deveined
- 1 medium zucchini, thinly sliced
- 1 cup corn kernels (fresh or frozen)
- 1/2 cup chopped red onion
Marinade and Seasoning
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tbsp chopped fresh parsley
- 1 tsp salt
- 1/2 tsp black pepper
Other
- 4 large sheets of aluminum foil
Instructions
- Preheat Grill: Preheat your grill to medium-high heat to ensure it’s hot and ready for cooking the foil packets evenly.
- Prepare the Mixture: In a large bowl, combine the shrimp, thinly sliced zucchini, corn kernels, chopped red onion, olive oil, lemon juice, fresh parsley, salt, and black pepper. Toss everything together thoroughly to evenly coat the ingredients with the marinade and seasoning.
- Assemble Foil Packets: Lay out four large sheets of aluminum foil. Divide the shrimp and vegetable mixture evenly among these sheets, placing the mixture in the center of each sheet.
- Seal Packets: Fold the foil over the mixture and crimp the edges securely to create sealed packets. Leave a small opening or vent at the top of each packet to allow steam to escape during grilling.
- Grill the Packets: Place the foil packets on the preheated grill. Cook for 10-12 minutes, or until the shrimp are fully cooked (opaque and firm) and the vegetables are tender.
- Serve: Carefully open each foil packet (watch out for hot steam) and serve immediately while hot for best flavor and texture.
Notes
- Fresh or frozen corn kernels can be used, but if using frozen, no need to thaw.
- Adjust seasoning to taste, especially salt and pepper.
- Try adding other vegetables like bell peppers or cherry tomatoes for variety.
- Ensure foil packets are sealed but allow some ventilation to prevent bursting.
- Use medium-high heat on the grill to cook evenly without burning the foil.
