Ingredients

Scale

Roasted Sweet Potatoes

  • 1 pound sweet potatoes, peeled and diced
  • 2 Tablespoons olive oil
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ½ teaspoon smoked paprika

Seasoned Ground Beef

  • 1 pound lean ground beef
  • 1 teaspoon 7 spice
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper

Fresh Toppings

  • 1 cup cottage cheese
  • 1 cup diced cucumber
  • 1 cup chopped tomatoes
  • ½ cup sliced radishes
  • ¼ cup sliced red onions
  • ¼ cup feta cheese crumbles
  • ¼ cup olives (Kalamata or green)

Finishing Touches

  • Hot honey (for drizzling)
  • Hummus (for dolloping)

Instructions

  1. Roast the Sweet Potatoes: Preheat your oven to 425°F (220°C). Toss the diced and peeled sweet potatoes in olive oil, smoked paprika, salt, and pepper until evenly coated. Spread them out in a single layer on a baking sheet. Roast for 25–30 minutes, flipping halfway through, until the sweet potatoes are golden brown and tender.
  2. Cook the Ground Beef: While the sweet potatoes roast, heat a large skillet over medium heat. Add the ground beef and break it up as it cooks. When the beef starts to brown, season it with 7 spice, sea salt, and black pepper. Continue cooking, stirring occasionally, until fully cooked and aromatic.
  3. Prepare the Fresh Toppings: While the beef cooks, dice the cucumbers, chop the tomatoes, slice the radishes and red onions, and have the olives and feta cheese ready for assembly.
  4. Assemble the Bowls: Begin by placing a generous base of roasted sweet potatoes in each bowl. Spoon the seasoned ground beef over the top. Add the fresh toppings by arranging cottage cheese, diced cucumber, chopped tomatoes, sliced radishes, crumbled feta cheese, sliced red onion, and olives evenly across each bowl.
  5. Add Finishing Touches and Serve: Finish each bowl with a dollop of hummus and a drizzle of hot honey to add sweetness and heat. Serve immediately and enjoy a balanced, flavorful meal.

Notes

  • Use lean ground beef to reduce fat content.
  • Adjust the amount of hot honey based on your preferred spice level.
  • Substitute feta with goat cheese for a different flavor profile.
  • Sweet potatoes can be roasted the night before for quicker meal prep.
  • This recipe can be doubled for larger groups.
