Delicious and creamy Instant Pot Egg Bites that are perfect for a quick breakfast or snack. Made with eggs, cottage cheese, and your choice of flavorful add-ins like Gruyere and bacon, these protein-packed bites are cooked to perfection using the Instant Pot for a light, fluffy texture.

Basic Egg Bite Mixture

  • 4 large eggs (200 grams)
  • 1/2 cup fat free cottage cheese (4 fl oz)
  • 1 tbsp heavy cream (1/2 fl oz)
  • Salt and pepper to taste

Gruyere & Bacon Add-Ins

  • 1/3 cup Gruyere cheese, shredded (30 grams)
  • 5 slices crispy cooked 25% less sodium bacon, finely chopped (33 grams, cooked weight)

Monterey Jack & Roasted Pepper Add-Ins

  • 1/2 cup Monterey jack cheese, shredded (40 grams)
  • 1/4 cup roasted red pepper, finely chopped (34 grams)
  • 1/4 cup baby spinach, chopped

Turkey Sausage & Cheddar Add-Ins

  • 1/2 cup Jennie-O turkey sausage, cooked and finely crumbled (58 grams)
  • 1/3 cup cheddar cheese, shredded (30 grams)
  • 1 tbsp chives, chopped


Instructions

  1. Prepare Add-Ins: Choose one of the three flavor options (Gruyere & Bacon, Monterey Jack & Roasted Pepper, Turkey Sausage & Cheddar) and divide the associated add-ins evenly between the egg bite molds. This balances flavors evenly in each bite.
  2. Blend Egg Mixture: Combine eggs, cottage cheese, heavy cream, salt, and pepper in a blender. Blend for about 30 seconds until the mixture is smooth and creamy, which ensures a silky texture in the finished egg bites.
  3. Fill and Set Up Instant Pot: Pour the blended egg mixture into the egg bite molds, filling each about 3/4 full. Gently tap the molds to release air bubbles. Add 1 to 1.5 cups of water to the Instant Pot’s inner pot. Place the handled trivet inside and stack the filled molds on top before lowering them carefully into the pot.
  4. Cook Egg Bites: Set the Instant Pot to steam for 11 minutes or use high pressure setting for 9 minutes followed by 10 minutes of natural pressure release. After cooking, vent any remaining pressure carefully and remove the molds. Flip the egg bites onto a plate to serve. The natural release helps maintain a fluffy texture without deflating the egg bites.
