- 1 1/2 pounds thinly sliced ribeye or sirloin steak
- 1 green bell pepper, thinly sliced
- 1 small onion, thinly sliced
- 1 cup mushrooms, sliced

- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Cheese and Garnish
- 8 slices provolone cheese

Instructions
- Sauté the Vegetables: Heat olive oil in a large skillet over medium-high heat. Add the thinly sliced green bell pepper, onion, and mushrooms. Sauté for 5 to 7 minutes until the vegetables are soft and slightly caramelized. Remove from the skillet and set aside.
- Cook the Steak: In the same skillet, add the thinly sliced steak. Season it with garlic powder, salt, and black pepper. Cook for 2 to 3 minutes until just browned, making sure to stir occasionally for even cooking.
- Combine Steak and Vegetables: Return the sautéed vegetables to the skillet with the steak. Stir well to combine all ingredients evenly and warm through. Remove from heat.
- Melt the Provolone Cheese: Preheat your oven to 375°F (190°C). Lay the provolone slices on a baking sheet lined with parchment paper. Bake for 5 to 6 minutes or until the cheese melts and bubbles. Remove and allow the cheese to cool for about 1 minute until it is slightly firm but still pliable for rolling.
- Assemble the Roll Ups: Spoon the steak and vegetable mixture onto each slice of melted provolone. Roll each slice tightly around the filling to form roll ups. Secure with toothpicks if needed to hold the shape.
- Serve: Serve the roll ups warm, garnished with chopped parsley if desired.
