  1. Combine ingredients: In a large bowl, mix together the leftover mashed potatoes, egg, shredded cheddar cheese, grated Parmesan cheese, all-purpose flour, chopped green onions, salt, and black pepper until fully combined and thick enough to hold its shape.
  2. Heat skillet: Place a large skillet over medium heat and heat the butter or oil until hot and shimmering.
  3. Form pancakes: Scoop approximately ¼ cup of the potato mixture and gently flatten it into a pancake shape in the skillet.
  4. Cook first side: Cook the pancake for 3 to 4 minutes on one side until golden brown and crispy.
