Scale
Main Ingredients
- 2 cups heavy cream
- 1 cup whole milk
- 0.5 cup granulated sugar
- 2 teaspoons unflavored gelatin powder
- 3 tablespoons cold water
- 1 teaspoon vanilla extract
- 1 cup mango puree (fresh or canned)
- 0.25 cup diced fresh mango (for garnish)
- 1 tablespoon toasted coconut (optional)
Instructions
- Bloom the Gelatin: Sprinkle the gelatin powder over cold water in a small bowl and let it sit undisturbed for 5 minutes until it softens and blooms.
- Heat Cream Mixture: In a medium saucepan, combine heavy cream, whole milk, and granulated sugar. Heat on medium, stirring occasionally, until the sugar dissolves and the mixture is hot but not boiling. Remove from heat.
- Dissolve Gelatin: Stir the bloomed gelatin into the hot cream mixture until it is completely dissolved. Then add the vanilla extract and mix well.
- Set Base Layer: Pour the cream mixture evenly into serving glasses or ramekins, filling halfway. Refrigerate for 2 hours or until set.
- Layer Mango Puree: Once the base is firm, carefully spoon the mango puree on top of each panna cotta, spreading it smoothly with a spoon.
- Final Chill: Return the panna cottas to the refrigerator and chill for an additional 1 hour to allow the mango layer to set.
- Garnish and Serve: Before serving, garnish each panna cotta with diced fresh mango and toasted coconut if using. Enjoy immediately for the best texture and flavor.
Notes
- For a smoother mango layer, strain the mango puree before layering.
- Optionally, drizzle passion fruit pulp on top for an added tropical twist.
