  • 0.25 cup diced fresh mango (for garnish)
  • 1 tablespoon toasted coconut (optional)


Instructions

  1. Bloom the Gelatin: Sprinkle the gelatin powder over cold water in a small bowl and let it sit undisturbed for 5 minutes until it softens and blooms.
  2. Heat Cream Mixture: In a medium saucepan, combine heavy cream, whole milk, and granulated sugar. Heat on medium, stirring occasionally, until the sugar dissolves and the mixture is hot but not boiling. Remove from heat.
  3. Dissolve Gelatin: Stir the bloomed gelatin into the hot cream mixture until it is completely dissolved. Then add the vanilla extract and mix well.
  4. Set Base Layer: Pour the cream mixture evenly into serving glasses or ramekins, filling halfway. Refrigerate for 2 hours or until set.
  5. Layer Mango Puree: Once the base is firm, carefully spoon the mango puree on top of each panna cotta, spreading it smoothly with a spoon.
  6. Final Chill: Return the panna cottas to the refrigerator and chill for an additional 1 hour to allow the mango layer to set.
  7. Garnish and Serve: Before serving, garnish each panna cotta with diced fresh mango and toasted coconut if using. Enjoy immediately for the best texture and flavor.
