- 8 whole wheat tortillas
- ½ cup sun-dried tomato paste (or pesto as an alternative)
Instructions
- Prepare Egg Mixture: In a large bowl, whisk together the 12 eggs and 2 tablespoons of water until fully combined and slightly frothy, to ensure fluffy scrambled eggs.
- Sauté Spinach: Heat 2 teaspoons of olive oil in a large skillet over medium heat. Add the 5 oz of fresh baby spinach and cook until wilted, about 2-3 minutes. Remove the spinach from the skillet and set aside.
- Cook Eggs: In the same skillet, add a little cooking spray or butter if needed. Pour in the egg mixture and cook over medium-low heat. Gently stir with a spatula to scramble the eggs until just set, about 5-7 minutes. Be careful not to overcook; remove from heat when done.
- Combine Filling: Add the sautéed spinach and ½ cup crumbled feta cheese to the scrambled eggs. Gently fold to combine everything evenly.
- Prepare Tortillas: Spread about 1 tablespoon of sun-dried tomato paste (or pesto) onto each of the 8 whole wheat tortillas for flavor.
- Assemble Wraps: Spoon an equal portion of the egg, spinach, and feta mixture onto the center of each tortilla. If using, drain and add one roasted red pepper to each wrap now.
- Roll Wraps: Fold the sides of each tortilla over the filling and roll up tightly to enclose. Serve immediately while warm or store for later use. If freezing, cool the filling before assembling to preserve texture.
