Description

This No-Bake Cherry Fudge is a delightful and easy-to-make treat that combines creamy white chocolate with sweet maraschino cherries and fluffy mini marshmallows. Perfectly smooth and rich, it requires no baking and sets quickly in the refrigerator, making it an ideal dessert for any occasion.

Ingredients

Scale

Fudge Base

  • 2 cups white chocolate chips
  • 1 can (14 ounces) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Add-ins

  • 1 cup chopped maraschino cherries (well drained and patted dry)
  • 1 cup mini marshmallows

Instructions

  1. Prepare Pan: Line an 8-inch square pan with parchment paper, leaving some overhang on the sides to easily lift out the fudge later.
  2. Melt Chocolate Mixture: In a medium saucepan over low heat, combine the white chocolate chips and sweetened condensed milk. Stir constantly until the mixture is completely smooth and fully melted, preventing scorching.
  3. Add Flavors: Remove the saucepan from heat and stir in the vanilla extract and a pinch of salt to enhance the taste.
  4. Fold in Cherries and Marshmallows: Gently fold the chopped, well-drained maraschino cherries and mini marshmallows into the chocolate mixture, ensuring even distribution without crushing the ingredients.
  5. Set the Fudge: Pour the fudge mixture evenly into the prepared pan. Smooth the top with a spatula for a neat finish.
  6. Refrigerate: Place the pan in the refrigerator and chill for at least 2 hours or until the fudge is firm.
  7. Serve: Once set, use the parchment paper overhang to lift the fudge out of the pan and cut into 25 squares. Enjoy!

Notes

  • Make sure the cherries are thoroughly dried to prevent excess moisture which can affect the fudge texture.
  • For added texture and flavor, consider adding 1/2 cup chopped nuts such as walnuts or pecans.
