- 1 cup walnuts, chopped
- 1/2 cup rolled oats
- 2 tbsp espresso powder (or instant coffee powder)
- 1/4 cup almond butter (or peanut butter)
- 1 tbsp honey or maple syrup (optional, for added sweetness)
- 1 tsp vanilla extract
- 1/4 tsp sea salt
- 1 tbsp chia seeds (optional, for extra nutrition)
Instructions
- Prepare the Dates: Place the pitted dates in a food processor and pulse until they form a sticky paste. If the mixture is too thick, add a tablespoon of water to help blend smoothly.
- Blend the Ingredients: Add the chopped walnuts, rolled oats, espresso powder, almond butter, honey or maple syrup (if using), vanilla extract, sea salt, and chia seeds (if using) to the food processor. Blend until all ingredients are well combined and the mixture holds together when pressed.
- Press the Mixture into a Pan: Line an 8×8-inch square pan with parchment paper. Transfer the blended mixture into the pan and press it down firmly and evenly to form the base shape.
- Chill the Slice: Place the pan in the refrigerator and chill for at least 2 hours or until the slice becomes firm and set.
- Serve: Once chilled, remove from the pan using the parchment paper and cut into squares or bars. Enjoy as an energizing snack with the delightful crunch of nuts and robust coffee flavor.
