Instructions
- Prepare the berries: Rinse the mixed fresh berries thoroughly under cold water and pat them dry gently with paper towels to remove excess moisture.
- Whip the cream: In a large mixing bowl, whip the heavy whipping cream using a hand mixer or stand mixer until soft peaks form. Gradually add the granulated sugar and vanilla extract while continuing to whip until stiff peaks form; this should take about 3-5 minutes.
- Layer the base: Place a layer of graham crackers evenly on the bottom of an 8×8 inch baking dish.
- Add first cream and berry layers: Spread half of the whipped cream mixture evenly over the graham cracker layer, then sprinkle half of the mixed berries on top of the cream layer.
- Repeat layering: Add another layer of graham crackers, followed by the remaining whipped cream mixture spread evenly, and finish with the remaining fresh berries arranged on top.
- Chill the cake: Cover the dish tightly with plastic wrap and refrigerate the cake for at least 4 hours, preferably overnight, to allow the graham crackers to soften and flavors to meld.
- Serve: Once chilled and set, slice the icebox cake into squares and serve cold for a refreshing summer dessert.
