- 1 pound ground turkey
- 1 cup lentils (green or brown)
- 1 medium onion, diced

- 3 carrots, sliced
- 2 celery stalks, chopped
- 1 can (14.5 oz) diced tomatoes
- 6 cups chicken or vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon ground cumin
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon olive oil
- Fresh parsley (optional, for garnish)
Instructions
- Sauté Vegetables: Heat olive oil in a large pot over medium heat. Add diced onion and sauté until softened, about 4-5 minutes. Add minced garlic and cook for an additional minute until fragrant.
- Brown Turkey: Add ground turkey to the pot and cook until browned and no longer pink, breaking it apart with a spoon as it cooks, about 5-7 minutes.
- Cook Vegetables: Stir in sliced carrots and chopped celery, cooking until they begin to soften, approximately 3-4 minutes.
- Add Lentils and Broth: Pour in the lentils, diced tomatoes with their juices, chicken or vegetable broth, dried thyme, ground cumin, salt, and black pepper. Stir well to combine and bring the mixture to a boil.
- Simmer Soup: Reduce the heat to low. Cover the pot and let the soup simmer gently for 30 to 40 minutes, or until the lentils are tender and all flavors are well melded.
- Final Seasoning: Taste the soup and adjust the seasoning with additional salt and pepper as needed. Serve hot, garnished with fresh parsley if desired.
