Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the carrots to a tender and flavorful finish.
- Melt Garlic Butter: In a small saucepan over medium heat, melt the butter. Add the minced garlic and cook for 1–2 minutes until it becomes fragrant, infusing the butter with garlic flavor.
- Toss Carrots: Arrange the carrot pieces on a large baking sheet. Drizzle the warmed garlic butter over the carrots, then sprinkle with Italian seasoning, salt, and freshly ground black pepper. Toss everything together to coat the carrots evenly.
- Roast Carrots: Place the baking sheet in the preheated oven and roast the carrots for 20–25 minutes. Stir halfway through to ensure even cooking. Roast until the carrots are tender on the inside and lightly browned on the outside.
- Add Parmesan: Remove the baking sheet from the oven. Sprinkle the grated Parmesan cheese evenly over the carrots. Return the baking sheet to the oven and roast for an additional 3–5 minutes until the cheese is melted and golden.
- Garnish and Serve: Take the roasted carrots out of the oven and garnish with chopped fresh parsley. Serve immediately as a savory side dish.
