Description

This Pear and Gorgonzola Flatbread combines the sweet juiciness of ripe pears with the rich, tangy flavor of Gorgonzola cheese on a crispy puff pastry or flatbread base. Topped with honey, crunchy walnuts, and peppery arugula, this elegant and easy-to-make flatbread is perfect for a sophisticated dinner or appetizer.

Ingredients

Scale

Base

  • 1 sheet of puff pastry or flatbread

Toppings

  • 2 pears, thinly sliced
  • 4 oz (120g) Gorgonzola cheese, crumbled
  • 1/4 cup (60ml) honey
  • 1/4 cup (30g) chopped walnuts
  • A handful of arugula leaves
  • 1 tablespoon olive oil
  • Freshly cracked black pepper, to taste

Optional Substitutions

  • Swap Gorgonzola with goat cheese or blue cheese
  • Use pecans instead of walnuts

Instructions

  1. Preheat the Oven: Set your oven to 400°F (200°C) so it’s ready to bake the flatbread to a golden, crispy perfection.
  2. Roll Out the Puff Pastry: Lightly flour your work surface, roll out the puff pastry sheet to an even thickness, and place it on a baking sheet. If using flatbread instead, lay it directly on the baking sheet without rolling.
  3. Drizzle Olive Oil: Evenly drizzle 1 tablespoon of olive oil over the puff pastry or flatbread base to add moisture and help achieve a beautiful golden crust.
  4. Arrange the Pear Slices: Thinly slice 2 pears and arrange the slices overlapping across the entire surface of the base for even coverage and balance with the cheese.
  5. Scatter the Cheese: Sprinkle 4 oz (120g) of crumbled Gorgonzola cheese evenly over the layered pears, distributing the cheese flavor throughout the flatbread.
  6. Bake: Place the flatbread in the preheated oven and bake for 15-20 minutes until the crust is golden and crispy and the cheese is melted and slightly bubbly.
  7. Final Touches: Remove the flatbread from the oven and immediately drizzle 1/4 cup (60ml) honey over the top. Sprinkle with 1/4 cup (30g) chopped walnuts, a handful of fresh arugula leaves, and freshly cracked black pepper to taste for a finishing burst of flavor and texture.

Notes

  • You can substitute Gorgonzola with goat cheese or blue cheese for different flavor profiles.
  • Use pecans in place of walnuts if desired.
  • Ensure pears are thinly sliced to help cook evenly during baking.
  • For a crispier crust, place the flatbread on a preheated baking stone or steel if available.
  • Serve immediately after adding honey and toppings for the best texture and flavor contrast.
