  1. Combine Ingredients: In a large saucepan, combine the chopped pineapple, sliced candied jalapeños along with a spoonful of their syrup, fresh diced jalapeños, granulated sugar, apple cider vinegar, and a pinch of salt. Stir well to mix all ingredients.
  2. Initial Cooking: Place the saucepan over medium-high heat and bring the mixture to a boil. Once boiling, reduce the heat to medium and simmer for 8 to 10 minutes, stirring frequently, until the fruit softens and the sugar is fully dissolved.
  3. Boil with Pectin: Increase the heat to regain a full rolling boil. Stir constantly while adding the liquid pectin. Boil hard for exactly 1 minute to ensure the jelly sets properly.
  4. Remove Foam and Rest: Remove the mixture from heat and skim off any foam that has formed on the surface. Allow the jelly to rest for 5 minutes to settle before bottling.
  5. Jar the Jelly: Carefully ladle the hot jelly into clean, hot jars. Let it cool completely at room temperature. Once cooled, refrigerate the jelly for up to 3 weeks or freeze for longer preservation.
