Description

Plantain Puffs are a delightful Caribbean dessert featuring ripe plantains blended into a smooth batter and fried until golden and crispy. These sweet, fluffy bites are flavored with cinnamon and a hint of vanilla, dusted with powdered sugar for an irresistible tropical treat.

Ingredients

Scale

Main Ingredients

  • 2 large ripe plantains, peeled and chopped
  • 2 large eggs
  • 3 tablespoons melted butter
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. Blend Plantains and Wet Ingredients: Place the chopped plantains in a food processor and blend until smooth. Add the eggs, melted butter, sugar, and vanilla extract to the processor and blend again until the mixture is well combined and smooth.
  2. Prepare Dry Mix: In a separate bowl, whisk together the all-purpose flour, baking powder, salt, and ground cinnamon ensuring even distribution of the dry ingredients.
  3. Combine Batter: Add the dry mixture to the blended plantain mixture and stir gently until a thick batter forms. Avoid overmixing to maintain a light texture.
  4. Heat Oil: Pour about 2 inches of vegetable oil into a deep skillet and heat over medium heat until it reaches approximately 350°F (175°C), ideal for frying.
  5. Fry Plantain Puffs: Using a small cookie scoop or spoon, carefully drop 5 to 6 dollops of batter into the hot oil. Fry for about 2 to 3 minutes per batch, turning occasionally to ensure even golden brown coloring on all sides.
  6. Drain and Cool: Remove the cooked puffs with a slotted spoon and drain on paper towels to remove excess oil.
  7. Serve: Dust the warm plantain puffs with powdered sugar before serving for a sweet finish. Best enjoyed warm, with reheating possible in an air fryer for a few minutes to re-crisp.

Notes

  • For a tropical twist, stir 1/4 cup shredded coconut into the batter before frying.
  • These puffs are best served warm but can be reheated in an air fryer for a few minutes to restore their crispiness.
  • Use ripe plantains with yellow skins and black spots for the sweetest flavor and best texture.
