Description

This Saucy Plum Chicken recipe features tender, juicy chicken breasts smothered in a sweet and tangy plum sauce made with plum jam, soy sauce, garlic, and ginger. It’s a quick, flavorful stovetop dish perfect for an easy weeknight dinner.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Plum Sauce

  • 1/2 cup plum jam
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger

Instructions

  1. Prepare the chicken: Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts evenly with salt and pepper on both sides.
  2. Cook the chicken: Place the chicken breasts in the hot skillet and cook for 6-7 minutes on each side until they are nicely browned and cooked through (internal temperature should reach 165°F / 74°C).
  3. Make the plum sauce: While the chicken cooks, whisk together the plum jam, soy sauce, rice vinegar, minced garlic, and grated ginger in a small bowl until smooth and well combined.
  4. Add and simmer the sauce: Pour the plum sauce mixture into the skillet with the cooked chicken. Bring it to a gentle simmer over medium heat, cooking for an additional 2-3 minutes to allow the sauce to thicken and coat the chicken beautifully.
  5. Serve: Spoon the thickened sauce over the chicken breasts and serve immediately, pairing with rice or steamed vegetables for a complete meal.

Notes

  • For extra flavor, marinate the chicken in half the plum sauce mixture for 30 minutes before cooking.
  • You can substitute plum jam with apricot or peach jam if unavailable.
  • Adjust the soy sauce amount to control saltiness based on your preference.
  • Serve with steamed rice, noodles, or a fresh green salad for a balanced dish.
  • Use boneless, skinless chicken thighs as an alternative for a juicier texture.
