Ingredients
Scale
Puff Pastry and Filling
- 1 sheet puff pastry, thawed
- 2 large eggs
- 1/4 cup shredded cheddar cheese
- 1/4 cup chopped bell peppers
- 1/4 cup chopped spinach
- 1 tablespoon milk
- Salt and pepper, to taste
Egg Wash and Garnish
- 1 egg (for egg wash)
- 1 tablespoon chives or green onions, finely chopped (for garnish)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prepare for baking the pop tarts.
- Prepare Puff Pastry: Roll out the thawed puff pastry sheet on a flat surface and cut it into 4 equal rectangles, which will form the base for each tart.
- Scramble Eggs: In a bowl, beat 2 eggs with milk, salt, and pepper. Lightly scramble the mixture in a skillet over medium heat until just set, then remove from the heat to avoid overcooking.
- Assemble Filling: Place a spoonful of the scrambled eggs in the center of each puff pastry rectangle. Add chopped spinach, bell peppers, shredded cheddar cheese, and any other savory fillings you prefer.
- Seal Tarts: Fold each puff pastry rectangle over to form a pocket, enclosing the filling. Seal the edges by pressing down firmly with a fork to prevent filling from leaking.
- Apply Egg Wash: Beat the remaining egg and brush it evenly over the tops of each tart to achieve a glossy, golden finish when baked.
- Bake: Arrange the tarts on the prepared baking sheet and bake for 20-25 minutes until they are puffed and golden brown.
- Garnish and Serve: Remove the baked tarts from the oven and sprinkle chopped chives or green onions on top. Serve warm for a delicious breakfast or snack.
Notes
- You can customize the filling by adding cooked sausage, bacon, or mushrooms for extra flavor.
- Make sure the scrambled eggs are only lightly cooked to keep them moist inside the tart.
- Use a fork to seal the edges firmly to prevent the filling from leaking during baking.
- Let the puff pastry thaw completely before rolling for best results.
- These pop tarts are best served warm, but can be stored and reheated for a quick breakfast on the go.
