Ingredients
Scale
Pastry
- 1 sheet puff pastry or pizza dough, thawed if frozen
Filling
- 4 large eggs, scrambled
- 1/2 cup cooked breakfast sausage or crumbled bacon
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced bell pepper
- 2 tbsp chopped green onions
- 1/4 tsp salt
- 1/4 tsp black pepper
Egg Wash
- 1 egg, beaten (for egg wash)
Instructions
- Preheat Oven: Preheat your oven to 375°F and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
- Prepare Dough: On a lightly floured surface, roll out the puff pastry or pizza dough into a rectangle about 12×9 inches to create an even base for the filling.
- Add Filling: Evenly spread the scrambled eggs over the dough, leaving a small border on all sides. Then top with cooked sausage or bacon, shredded cheddar cheese, diced bell pepper, and chopped green onions. Season with salt and black pepper for flavor.
- Roll Dough: Starting from the long edge, carefully roll the dough into a log, ensuring the filling stays evenly distributed and contained.
- Slice Rolls: Slice the rolled dough into 8 equal pieces using a sharp knife. Place each cut side up on the prepared baking sheet, keeping a little space between them.
- Apply Egg Wash: Brush the tops of each roll with the beaten egg to achieve a golden, shiny finish during baking.
- Bake: Bake in the preheated oven for 20 to 25 minutes or until the rolls are golden brown and puffed up.
- Cool & Serve: Remove from oven and let cool slightly before serving warm to enjoy the full flavors and texture.
Notes
- You can prepare these rolls ahead and refrigerate them overnight before baking to save time in the morning.
- Add jalapeños or a dash of hot sauce inside the filling for a spicy kick.
- These rolls make a great option for brunch, meal prep, or quick grab-and-go breakfasts.
- For a vegetarian version, use meat-free sausage or omit the meat entirely.
