Description

A flavorful and satisfying Shrimp and Steak Fried Rice recipe that combines tender slices of ribeye or sirloin steak with succulent shrimp, scrambled eggs, and fragrant jasmine rice. Stir-fried with garlic, onions, and soy-based sauces, this dish offers a perfect balance of textures and savory tastes, ideal for a quick and delicious weeknight meal.

Ingredients

Scale

Proteins

  • 6 oz ribeye or sirloin steak, cooked and sliced
  • 6 oz large shrimp, peeled and deveined
  • 2 large eggs, beaten

Vegetables & Aromatics

  • 2 cloves garlic, minced
  • 1 small white onion, diced
  • 2 stalks green onions, chopped (separate white and green parts)

Rice & Sauces

  • 3 cups cooked jasmine rice, cold and day-old
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil

Oils & Seasonings

  • 2 tablespoons neutral oil (canola or avocado)
  • salt and pepper to taste

Instructions

  1. Prepare Ingredients: Slice the cooked steak into bite-sized pieces. Pat the shrimp dry to ensure they sear well. Beat the eggs and chop the onion, garlic, and green onions, separating the white and green parts for later use.
  2. Cook the Eggs: Heat 1 tablespoon of neutral oil in a large skillet or wok over medium-high heat. Pour in the beaten eggs and scramble gently until just set, then remove them from the pan and set aside to keep warm.
  3. Cook Shrimp: Add the shrimp to the pan and sear for 1 to 2 minutes per side until they are just cooked through. Remove the shrimp and set aside with the eggs.
  4. Sear Steak: Briefly sear the steak pieces in the pan to warm through and develop a caramelized exterior. Remove and set aside.
  5. Sauté Aromatics: Add the onion to the pan and sauté for about 1 minute until slightly softened. Stir in the minced garlic and the white parts of the green onions, cooking until fragrant, about 30 seconds.
  6. Fry Rice: Add the remaining tablespoon of oil to the pan, then add the cold jasmine rice. Break apart any clumps and fry the rice, stirring frequently for 4 to 5 minutes until it becomes slightly crisp.
  7. Combine Ingredients: Return the cooked eggs, shrimp, and steak to the pan with the rice. Add the soy sauce and oyster sauce, stirring everything well to evenly distribute the flavors.
  8. Finish with Seasonings: Drizzle the sesame oil over the mixture, mix thoroughly, then season with salt and pepper to taste.
  9. Garnish and Serve: Toss in the green parts of the green onions just before serving. Serve the fried rice hot for the best flavor and texture.

Notes

  • Using day-old rice is essential for the best texture, as it helps prevent clumping and sogginess.
  • If you prefer, substitute the oyster sauce with additional soy sauce for a vegetarian option (omit shrimp and steak accordingly).
  • Adjust soy sauce and salt quantities to manage sodium content based on dietary preferences.
  • For a spicier kick, add some chopped chili peppers or a dash of chili oil while frying the aromatics.
  • Ensure shrimp is deveined and patted dry for optimal searing and texture.
