Description

Delight in these fluffy Strawberry Rolls topped with a luscious cream cheese icing. Soft yeast dough is filled with sweet strawberry jam and fresh chopped strawberries, then baked to golden perfection. Finished with a smooth, creamy frosting, these rolls make a perfect breakfast treat or dessert for any occasion.

Ingredients

Scale

Dough

  • ½ cup milk
  • 1 teaspoon active dry yeast
  • 2 cups all-purpose flour
  • ¼ cup sugar
  • ¼ teaspoon salt
  • ¼ cup unsalted butter or margarine, softened to room temperature
  • 1 egg

Filling

  • ¾ cup strawberry jam
  • 1 cup strawberries, fresh and chopped into small pieces

Cream Cheese Icing

  • ½ cup cream cheese, at room temperature
  • 3 tablespoons unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1½ cups powdered sugar

Instructions

  1. Activate Yeast: Warm the milk in the microwave for 30 seconds until lukewarm. Stir in the active dry yeast and let it sit for 5 minutes until the yeast is dissolved and foamy.
  2. Prepare Dough: In a stand mixer bowl, combine the flour, sugar, and salt. Add the softened butter, egg, and the activated yeast mixture. Using a dough hook, knead for 3-5 minutes until the dough becomes elastic and soft.
  3. First Rise: Place the dough in an oiled bowl, cover tightly with plastic wrap, and allow it to rise in a warm place until doubled in size. To speed this up, place the covered dough in a warm oven set to 350°F for 1 minute then turned off.
  4. Prepare Baking Dish: Generously butter a 9-inch pie plate or cast-iron skillet to prevent sticking.
  5. Shape Rolls: Roll the dough out on a floured surface to form an 18×12 inch rectangle. Spread the strawberry jam evenly over the dough, then sprinkle the chopped fresh strawberries on top.
  6. Roll and Cut: Starting from the far edge, roll the dough tightly toward you, pinching the seam closed at the end. Cut the roll into 8 equal slices to form individual rolls.
  7. Second Rise: Place the rolls cut side up into the prepared dish. Cover with plastic wrap and let them rise again until doubled in a warm place, using the warm oven method if desired.
  8. Make Icing: Combine the cream cheese, softened butter, vanilla extract, and powdered sugar in a mixer bowl. Mix until smooth and creamy. Adjust the texture by adding a little milk or powdered sugar as needed for a spreadable consistency.
  9. Bake: Preheat oven to 350°F. Bake the rolls for 30 minutes or until they turn golden brown and are cooked through.
  10. Finish and Serve: Allow the rolls to cool for 10 minutes, then drizzle generously with the cream cheese icing. Serve warm and enjoy!

Notes

  • Use fresh yeast for best results, and ensure milk is lukewarm to properly activate yeast.
  • Butter the baking dish well to prevent sticking and help rolls brown evenly.
  • The warm oven method helps speed dough rising but ensure the oven is off while proofing to avoid killing the yeast.
  • Adjust cream cheese icing consistency to suit your preference—thicker for spreading or thinner for drizzling.
  • Store leftover rolls in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
  • These rolls can be reheated briefly in the microwave or oven before serving to refresh softness.
