  • 24 large white or cremini mushrooms, stems removed and finely chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 0.25 cup finely chopped onion
  • 0.5 cup cream cheese, softened
  • 0.5 cup shredded mozzarella cheese
  • 0.25 cup grated Parmesan cheese
  • 0.25 cup breadcrumbs
  • 1 tablespoon fresh parsley, finely chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper


Instructions

  1. Preheat Oven and Prepare Mushroom Caps: Preheat your oven to 375°F (190°C) and lightly grease a baking sheet or baking dish. Clean the mushrooms thoroughly and carefully remove the stems. Finely chop the stems and set them aside for the filling.
  2. Sauté Mushroom Stems and Aromatics: Heat olive oil in a skillet over medium heat. Add the chopped mushroom stems and onion and sauté for 4 to 5 minutes until they become soft and fragrant. Add minced garlic and cook for an additional 30 seconds to release its aroma, then remove from heat to cool slightly.
  3. Prepare the Filling Mixture: In a mixing bowl, combine cream cheese, shredded mozzarella, grated Parmesan, breadcrumbs, fresh parsley, salt, and black pepper. Stir in the sautéed mushroom stem mixture until everything is evenly mixed and creamy.
  4. Stuff the Mushroom Caps: Spoon the filling generously into each mushroom cap, pressing lightly to fill completely. Arrange the stuffed mushrooms evenly on the prepared baking sheet.
  5. Bake the Mushrooms: Place the baking sheet in the preheated oven and bake for 18 to 22 minutes, or until the mushroom caps are tender and the tops of the stuffing are lightly golden and bubbly.
