Description

Summer Berry Bliss Icebox Delight is a no-bake layered dessert featuring a crunchy graham cracker base, creamy vanilla pudding blended with cream cheese and whipped cream, fresh strawberries and blueberries, all topped with a drizzle of melted white chocolate. Chilled for several hours, this refreshing treat is perfect for summer gatherings and easy to prepare ahead of time.

Graham Cracker Layer

  • 19 oz graham crackers

Pudding Mixture

  • 8 oz cream cheese, softened
  • 2 (3.4 oz) packages Vanilla Instant Pudding
  • 2½ cups cold milk

Whipped Cream Layer

  • 12 oz Cool Whip (or homemade whipped cream)

Fruit Layers

  • 3 cups fresh strawberries, sliced
  • 1½ cups fresh blueberries

Topping

  • 2 oz white chocolate chips


Instructions

  1. Beat cream cheese and dry pudding mixes: In a large bowl, use a mixer to beat the softened cream cheese and the dry vanilla instant pudding mixes together until smooth and well blended.
  2. Gradually beat in milk: Slowly add the cold milk to the cream cheese and pudding mixture while continuously beating to combine all ingredients thoroughly.
  3. Stir in Cool Whip: Gently fold in the Cool Whip or your homemade whipped cream, reserving about ½ cup to use later as a topping for the dessert.
  4. Layer the dessert: In a 9×13 inch pan, start by spreading a thin layer of the reserved Cool Whip. Then create alternating layers of graham crackers, the pudding mixture, and fresh strawberry and blueberry slices. Repeat these layers until the pan is filled.
  5. Refrigerate: Cover the assembled dessert and chill it in the refrigerator for at least 4 hours or preferably overnight. This allows the graham crackers to soften and the flavors to meld together.
