Description

A delightful Summer Peach and Blueberry Cobbler featuring juicy peaches and fresh blueberries baked under a tender, golden biscuit topping. This easy-to-make dessert is perfect for warm-weather gatherings and pairs wonderfully with a scoop of ice cream.

Ingredients

Scale

Fruit Filling

  • 4 large peaches, peeled and sliced
  • 1 cup blueberries
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch

Cobbler Topping

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 1/2 cup milk
  • 1 tablespoon coarse sugar for sprinkling

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it reaches the ideal temperature for baking the cobbler evenly.
  2. Prepare Fruit Filling: In a large bowl, combine the sliced peaches, blueberries, granulated sugar, lemon juice, vanilla extract, and cornstarch. Mix thoroughly so the fruits are evenly coated. Pour this mixture into a 9×9-inch baking dish, spreading it out evenly.
  3. Make Cobbler Topping: In a separate bowl, whisk together the flour, sugar, baking powder, and salt. Using a pastry cutter or your fingers, cut the cold, cubed butter into the dry ingredients until the mixture resembles coarse crumbs. Stir in the milk just until combined to form a batter.
  4. Assemble Cobbler: Drop spoonfuls of the topping evenly over the fruit filling in the baking dish. Sprinkle the surface with coarse sugar to add a sweet crunch.
  5. Bake Cobbler: Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the topping is golden brown and the fruit filling is bubbly and thickened.
  6. Cool and Serve: Remove the cobbler from the oven and let it cool for a few minutes. Serve warm, ideally with a scoop of vanilla ice cream for a classic combination.

Notes

  • Peeling peaches is optional, but it results in a smoother texture.
  • For a deeper flavor, allow the fruit filling to macerate with sugar for 15-20 minutes before assembling the cobbler.
  • Use cold butter to ensure a crumbly, biscuit-like topping.
  • If fresh peaches aren’t available, frozen peaches can be used; thaw and drain excess liquid before using.
  • Coarse sugar adds a nice texture but can be substituted with regular granulated sugar if unavailable.
