Ingredients
Scale
Chicken and Seasonings
- 0.75-1 lb chicken breasts, cubed into 1-inch pieces
- 1 Tbsp corn starch
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1/2 tsp red pepper
Sauce and Garnishes
- 1 Tbsp butter
- 3 cloves garlic, minced
- 1 inch ginger, minced
- 3/4 cup sweet chili sauce
- 1–2 Tbsp honey
- 1 lime, sliced
- 3 Tbsp green onions, chopped
Vegetables for Baking
- Sliced bell peppers (quantity as desired, approximately 1 cup)
- Sliced jalapeños (quantity as desired, approximately 1/4 cup)
Instructions
- Preheat the Oven: Preheat your oven to 375ºF (190ºC) to prepare for baking the chicken and vegetables.
- Prepare the Chicken: Cube the chicken breasts into 1-inch pieces. Toss them in a bowl with corn starch, black pepper, salt, and red pepper to evenly coat and season the chicken.
- Bake the Chicken: Spread the seasoned chicken pieces on a baking sheet along with sliced bell peppers and jalapeños. Bake in the oven for 20 minutes, flipping the chicken halfway through to ensure even cooking and browning.
- Make Sweet Chili Sauce: While the chicken bakes, melt the butter in a saucepan over medium heat. Add minced garlic and ginger and sauté until fragrant, about 1-2 minutes. Stir in the sweet chili sauce and honey, and let it simmer for a few minutes to blend the flavors.
- Combine: Once the chicken is cooked, pour the prepared sweet chili sauce over it. Toss everything together well to ensure the chicken pieces are fully coated in the sauce.
- Serve: Plate the sauced chicken over rice or fresh salad as desired. Garnish with chopped green onions and lime slices for a fresh and zesty finish.
Notes
- For a spicier dish, increase the amount of red pepper or jalapeños.
- You can substitute chicken breasts with chicken thighs for juicier results.
- Serve with steamed jasmine or basmati rice to soak up the flavorful sauce.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- Adjust honey quantity according to your sweetness preference.
