Description

This Sweet Potato, Feta & Caramelised Onion Tart combines the natural sweetness of roasted sweet potatoes and caramelized onions with the savory tang of crumbled feta cheese. Baked on flaky puff pastry with fresh thyme, it’s a perfect savory tart for a light lunch, brunch, or a flavorful appetizer.

Vegetables

  • 2 medium sweet potatoes, peeled and sliced thin
  • 1 large onion, thinly sliced

  • 1 tsp brown sugar
  • 1 tsp fresh thyme leaves

  • 4 oz feta cheese, crumbled

  • 1 egg, beaten (for egg wash)


Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prepare for roasting and baking.
  2. Roast Sweet Potatoes: Toss the thinly sliced sweet potatoes with olive oil, salt, and black pepper. Spread them evenly on the prepared baking sheet and roast in the oven for about 20 minutes until tender and slightly caramelized. Set aside once done.
  3. Caramelize Onions: While the potatoes roast, melt butter in a skillet over medium heat. Add the thinly sliced onions and sauté until soft, then sprinkle brown sugar over them. Continue cooking, stirring occasionally, until the onions are golden brown and caramelized, around 15 minutes. Remove from heat and set aside.
  4. Prepare Puff Pastry: Lightly flour a surface and roll out the thawed puff pastry slightly to smooth it. Transfer it to the baking sheet. Using a knife, score a 1-inch border around the edges without cutting all the way through—this will allow the pastry to puff beautifully in the center.
  5. Assemble Tart: Spread the caramelized onions evenly within the scored border of the pastry. Arrange the roasted sweet potato slices over the onions. Sprinkle the crumbled feta cheese and fresh thyme leaves evenly on top.
  6. Egg Wash & Bake: Brush the pastry border with the beaten egg to help it turn a golden brown during baking. Place the tart in the oven and bake for 20 to 25 minutes, or until the pastry is puffed up and golden.
  7. Serve: Allow the tart to cool slightly before slicing. Serve warm or at room temperature as a delicious appetizer, brunch, or light meal.

  • For crispier edges, chill the puff pastry before rolling out.
  • Fresh thyme can be substituted with rosemary or sage for a different flavor profile.
