Ingredients
Scale
Cheese Pierogi
- 2 (16-oz) packages frozen cheese pierogi
Meat and Seasoning
- 1 lb ground beef
- 1 (1-oz) package taco seasoning
- ½ cup water
Sauces and Cheese
- 8 oz Velveeta, cubed
- 1 (12-oz) jar salsa
- 1 (10.5-oz) can unsalted cream of chicken soup
- 1 cup shredded cheddar cheese
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350ºF (175ºC). Lightly spray a 9×13-inch baking dish with cooking spray to prevent sticking.
- Cook Ground Beef: In a large skillet over medium-high heat, cook the ground beef until it is no longer pink. Drain the excess fat to reduce greasiness. Return the beef to the skillet.
- Add Seasoning and Simmer: Add the taco seasoning packet and ½ cup water to the skillet. Stir everything together well and cook for about 5 minutes to allow the flavors to meld.
- Combine Sauces and Cheese: Stir in the canned cream of chicken soup, cubed Velveeta cheese, and salsa into the beef mixture. Reduce heat to low and cook, stirring constantly, until the Velveeta cheese has completely melted and the mixture is smooth and creamy.
- Mix in Pierogies and Assemble: Add the frozen cheese pierogies directly into the skillet and stir to coat them evenly with the sauce. Then transfer this mixture into the prepared 9×13-inch baking dish. Evenly sprinkle shredded cheddar cheese over the top.
- Bake: Bake in the preheated oven for 30 minutes or until the casserole is heated through and bubbly, and the cheddar cheese is melted.
Notes
- You can substitute Velveeta with a similar processed cheese for a creamy texture.
- Using unsalted cream of chicken soup helps control sodium levels, but regular cream of chicken soup can be used for more flavor.
- For a spicier kick, add jalapeños or hot sauce to the meat mixture.
- Make sure to thaw the pierogies slightly if desired, but they can be used frozen.
- This casserole reheats well and can be stored in the fridge for up to 3 days.
