Description
This quick and easy Taco Rice recipe combines seasoned ground beef, fluffy rice, zesty salsa, and melted cheddar cheese for a flavorful, satisfying meal perfect for busy weeknights or casual dinners.
Ingredients
Scale
Meat and Seasoning
- 1 pound ground beef
- 1 packet taco seasoning
Liquids and Grains
- 2 cups water
- 2 cups Minute Rice, uncooked
Toppings
- 1 cup salsa
- 1 cup shredded cheddar cheese
Instructions
- Brown the beef: In a large skillet over medium-high heat, add the ground beef and cook until browned, breaking it apart with a spatula. Drain off any excess grease to keep the dish from being too oily.
- Add seasoning and water: Stir in the taco seasoning packet and 2 cups of water with the browned beef. Bring the mixture to a boil, ensuring the seasoning dissolves and flavors the beef evenly.
- Cook the rice: Reduce the heat to low, then add the uncooked Minute Rice to the skillet. Stir to combine everything thoroughly. Cover the skillet with a lid and let it cook for about 5 minutes, or until the rice is tender and has absorbed most of the liquid.
- Finish with salsa and cheese: Remove the lid and stir in 1 cup of salsa and 1 cup of shredded cheddar cheese until the cheese melts and everything is well incorporated. Serve warm.
Notes
- Minute Rice cooks quickly and absorbs flavors well, making it ideal for this fast recipe.
- You can substitute ground turkey or chicken for a leaner option.
- If you prefer spicier food, use a hot salsa or add diced jalapeños.
- For added freshness, garnish with chopped cilantro or green onions.
- Leftovers can be refrigerated for up to 3 days and reheated on the stovetop or microwave.
